
Sometimes, the biggest successes happen when you aren’t intending on making any. It was raining, dark, and besides watching the Food Network, I was itching to do something. Off to the kitchen I went to see what I could come up with, and with one glance of the cocoa powder hiding behind the sugar, I knew what had to be made. There is very little that could measure up to warm brownies and a tall glass on milk on a rainy day. Little did I know that my brownies would turn into a delectable, gooey pudding perfect with ice cream, whipped cream, or just by itself.
** All measurements are approximations. Feel free to make your own concoction and see how it turns out!
Brownie Pudding
1 1/5 sticks of melted butter
1 3/4 cup of sugar
2 eggs
2 tsp of vanilla extract
1 2/3 cups of flour
3/4 cup of cocoa powder
1 tsp of baking powder
1 tsp of salt
Roughly chopped mixed nuts
(I used walnuts, hazelnuts, and almonds)

1. Preheat oven on Bake 350.
2. In large bowl, mix melted butter, sugar, vanilla extract, and eggs until well combined.
3. In medium bowl, mix flour, cocoa powder, baking powder, and salt.
4. Slowly add the flour mixture to the large bowl, stirring in a bit at a time.
5. Add the chopped nuts.
Grease a pan. I used one that was approx. 13″ by 8″. It really doesn’t matter.
Spread the mixture evenly in the pan. Place in oven. It should be done in 20 – 25 minutes. Check with a toothpick. If it comes out clean, it’s done! Set aside and cool until you are ready to delve right in.
